Chestnut Tahini Cookies



Simple, satisfying, healthy cookies made with a just a few ingredients.

Ingredients:

  • 3 cup fine chestnut flour

  • 2 cup tahini

  • 1 cup honey

  • 1 tsp salt (add more to taste if you prefer)

  • 1 tsp baking soda

  • 1 cup (ish) sesame seeds

Steps:

  1. Sift the flour through a sieve and break up any chunks.

  2. Add baking soda and salt to flour. Mix well.

  3. In a second vessel, combine wet ingredients.

  4. Combine wet and dry ingredients. The dough should easily form firm balls that hold together and keep their shape, like ceramic clay. You can add a little honey or flour to make them more or less dry.

  5. Roll the dough into little balls. Roll the balls in the sesame seeds to coat the outside, then roll again on a work surface to press the seeds into the surface of the balls so they don’t fall off.

  6. Bake at 350° F for 12-15 mins or until the cookies’ surface starts to crack

  7. Allow the cookies to cool on the pan. It’s tempting to try them, but they taste better cool and this step makes the outside get crispy and the inside get gooey.
