Our team recently returned from a three week research trip to Italy where we visited most of the major manufacturers of chestnut harvesting and processing equipment, as well as aggregator/processor operations representing over 1/2 of the country's chestnut throughput. We also got to visit a handful of family operations working in the traditional methods of the mountains, smoke drying chestnuts in stone smokehouses and storing them as year round staple foods.
We'll use these next two sessions to discuss what we saw, what takeaways we're bringing into our facility's design process, and to have plenty of space for questions/dialogue on what this might mean for the future of chestnut processing in the NE U.S.
