Chestnut Banana bread
100% chestnut flour makes for a most moist and flavorful banana bread that holds up against any classic recipe made with wheat flour. This recipe is sized for a standard 9x13” inch Pyrex dish.

Ingredients:
Wet ingredients:
6 ripe bananas
1 cup lard or oil
½ cup maple syrup or honey
3 eggs
Dry ingredients:
3 cups fine chestnut flour
1 tsp salt
1 tsp baking soda
2 tsp baking powder
Optional nuts of your choosing
Steps:
Pre heat oven to 350° F.
Mix wet and dry ingredients separately.
Then add dry to wet and mix until all the flour has been absorbed.
Add water (or milk) if needed for the batter to achieve a loose, nearly pourable consistency.
Optional: sprinkle some hickory nuts, pecans, or walnuts on top
Bake in a greased 9x13” inch dish at 350° F for about 40 minutes.
